Patês are so popular in Brazil, and they come in a variety of flavors and textures. This Sweet Corn Spread is one of the easiest to make, and no one will suspect you just spent 10 minutes when they taste it! Patê paired with a complementary bread or assortment of crackers is one of my favorite ways to enjoy an afternoon snack. I also like to have a little toast and Patê as a side to soups and salads. My first encounter with Patê was a canned veggie meat version on clearance from my local grocery market. Suffice it to say, I understood why they marked the price down so much!! Not sure if I even made it past the first bite.

Fresh-made Patê is a totally different story. In Brazil, canned patês also exist, however the best ones are made fresh and sold in the bakeries and supermarket delis, or better yet, homemade like this one. This recipe for Sweet Corn Spread/Patê de Milho is my original, inspired by the corn patês that are popular at family gatherings. It is simple and inexpensive, and based on how quickly it “disappeared” I gather my beloved snack fairy, (husband), thought it was tasty!

 

A few notes…

Most patês are a combination of creaminess and bits of texture and color. For the best results, I use an immersion blender. Regular blenders will work too, however you won’t have as much control over your texture. My immersion blender is a veteran amongst my kitchen tools. It’s a KitchenAid model that I received as a wedding gift four years ago, and this thing has been through thick and thin… literally! By no means is this the fanciest immersion blender, but I give it five stars because it took on all the deuties of a regular blender since we didn’t own one until a year ago. I blended everything from fruit smoothies and patês to flax seeds, mash potatoes, bread crumbs, and homemade seasoning pastes. It comes with a blending cup which is what I used to make this sweet corn spread.

A savory corn spread perfect for bread, crackers, rice cakes, veggies, and more!

Ingredients
  • 2 Cans of Sweet Yellow Corn OR 1 Bag of Frozen Corn
  • 3/4 Cup Mayonnaise, regular or vegan
  • 1/2 teaspoon salt
  • 1/2 Tablespoon Chimichurri or Taco Seasoning (without salt)
  • OPTIONAL: Juice from 1/2 of a small lime
Directions
  • Step 1 If using canned corn, drain and rinse. For frozen corn, thaw to room temperature.
  • Step 2 Combine all ingredients and blend until smooth using a food processor, immersion blender, or regular blender.
  • Step 3 Serve with your choice of bread, crackers, rice cakes, raw vegetables, and more!

  • Haven’t made it for awhile but I made something similar using broccoli. Your recipe sounds really good and I’d like to try it but I’m not sure whether I can get my husband to try it. He usually only likes corn as corn and not mixed with other things. Maybe I’ll have to be sneaky and not tell him what is in it and make it when he’s not around to see. 😂

    Just tried making this.
    Used 1 bag of frozen corn, partially thawed
    Veganise ( similar to mayonnaise but vegan)
    Homemade taco seasoning that is… I’m not sure how old. Flavor seemed weak so I added a little bit of Cayanne pepper at the end.
    Wish I had the lime but I don’t right now and I was just using what is on hand. Really good anyways.
    Thought it would be fun to creatively serve this so I looked around to see what I had and found the bell pepper. 😀

    • I served this yesterday with our lunch when we had our other daughter and granddaughter over. They both seem to really enjoy it. I tried putting it over my brussels sprouts and also dribbled some on my sweet potato, both of which were excellent that way. Really enjoying this new sauce, THANKS for sharing the recipe !
